Hello, I've just now found your blog while browsing on Google as I'm searching for some info on wall ovens!. It's an informative blog so I've bookmarked this site and I intend to revisit soon to allow more time for a more detailed read when I have more time.

Sounds good. One suggestion - don't peel and core the apples. Quater, then put them in a large heavy bottomed kettle with just enough water or apple juice to keep from sticking, and simmer until soft, then put through food mill. This method retains the nice pink color from the peels, plus all those nutrients lying next to the peel and the core.
